Lemon & Garlic Yellow Oyster Mushrooms Recipe

A quick, fresh and flavour-packed dish using Yellow Oyster mushrooms. Light, zesty and perfect as a side or served on toast, rice or pasta.

INGREDIENTS:

  • 200g Yellow Oyster mushrooms
  • 2 tbsp butter
  • 3 garlic cloves (minced)
  • 2 tbsp lemon juice
  • Pinch of sea salt
  • Pinch of black pepper
  • 1 tsp chopped fresh thyme
  • 1 tbsp chopped parsley
  • Sourdough toast, rice or pasta to serve

METHOD:

  1. Tear mushrooms into large strips.
  2. Melt butter in a frying pan over medium heat.
  3. Add garlic and sauté for 1–2 minutes.
  4. Add mushrooms and cook until golden brown (about 4–5 minutes).
  5. Add lemon juice, thyme, parsley, salt and pepper. Mix well.
  6. Serve over toast, rice or pasta. Add an extra squeeze of lemon if desired.

 

CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
