A quick, fresh and flavour-packed dish using Yellow Oyster mushrooms. Light, zesty and perfect as a side or served on toast, rice or pasta.

INGREDIENTS:
- 200g Yellow Oyster mushrooms
- 2 tbsp butter
- 3 garlic cloves (minced)
- 2 tbsp lemon juice
- Pinch of sea salt
- Pinch of black pepper
- 1 tsp chopped fresh thyme
- 1 tbsp chopped parsley
- Sourdough toast, rice or pasta to serve
METHOD:
- Tear mushrooms into large strips.
- Melt butter in a frying pan over medium heat.
- Add garlic and sauté for 1–2 minutes.
- Add mushrooms and cook until golden brown (about 4–5 minutes).
- Add lemon juice, thyme, parsley, salt and pepper. Mix well.
- Serve over toast, rice or pasta. Add an extra squeeze of lemon if desired.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
