Delicate and eye-catching, Yellow Oysters boast lemon-coloured caps and thin stems. Their aroma is light and citrusy, with a nutty, slightly peppery flavour that works well in delicate dishes. Due to their fragile structure, they’re ideal for light sautés or as a finishing touch.
Best cooked: Light stir-fry or added at the end of cooking.
Shelf life: 3–5 days in fridge. Best enjoyed fresh.
