We ship orders of fresh mushrooms Monday to Thursday to ensure they arrive promptly and avoid weekend delays.

  • Fresh Mushrooms: Harvested to order and shipped the same day they’re picked.
  • Please allow 1–3 days before dispatch based on harvest timing.
  • Sterile/Pasteurised substrate and grains are produced daily and we often keep bags on the shelf ready to ship, however we may need extra time to keep up with demand, please allow 5 days preparation time before we dispatch.  
  • Liquid cultures are produced once per week to maintain quality and consistency, please allow up to 7 days before dispatch,
  • Made-to-Order Items (colonised grain, substrate blocks, agar): Please allow 7–21 days for preparation before dispatch.

King Oyster / Trumpet (Pleurotus eryngii)

The most robust of all oyster varieties, King Oysters grow tall with thick white stems and small brown caps. Their dense, meaty texture makes them ideal for slicing into medallions and pan-searing like scallops or slow roasting for a steak-like bite.

Naturally umami-rich with subtle earthiness. These mushrooms are rich in ergothioneine and antioxidants.

Best cooked: Sliced thick and pan-seared or grilled. Also excellent slow-roasted.

Shelf life: 7–10 days in fridge. Best enjoyed fresh.

Please allow 1–3 days before dispatch based on harvest timing.

We harvest all mushrooms at their peak to ensure you receive them at their freshest and most flavourful—so they may not be quite ready the moment you place your order.

While every effort is made to ensure only clean mushrooms are harvested and packaged, there is a small possibility that trace amounts of substrate may be present.
