A quick and flavour-packed noodle dish using rich, umami Shiitake mushrooms. Perfect for a fast, satisfying meal with deep savoury notes.

INGREDIENTS:
- 150g Shiitake mushrooms
- 250g noodles (e.g. udon or egg noodles)
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 garlic cloves (minced)
- 1 bell pepper (sliced)
- 1 tsp grated ginger
- Optional: greens (pak choi or spinach)
- Optional: spring onions
- Optional: sesame seeds
METHOD:
- Remove Shiitake stems and slice the caps.
- In a small bowl, mix soy sauce, oyster sauce and sesame oil. Set aside.
- Heat vegetable oil in a wok or large frying pan over medium-high heat.
- Add Shiitake mushrooms and cook until tender and slightly browned (about 4–5 minutes).
- Add garlic and ginger, stir fry briefly until fragrant.
- Add bell pepper and optional greens, cook for 1–2 minutes.
- Add cooked noodles and pour over the sauce.
- Toss everything together until well coated and heated through.
- Serve topped with spring onions and sesame seeds.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
