Shiitake Garlic Soy Noodles Recipe

A quick and flavour-packed noodle dish using rich, umami Shiitake mushrooms. Perfect for a fast, satisfying meal with deep savoury notes.

INGREDIENTS:

  • 150g Shiitake mushrooms
  • 250g noodles (e.g. udon or egg noodles)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tbsp sesame oil
  • 1 tbsp vegetable oil
  • 2 garlic cloves (minced)
  • 1 bell pepper (sliced)
  • 1 tsp grated ginger
  • Optional: greens (pak choi or spinach)
  • Optional: spring onions
  • Optional: sesame seeds

 

METHOD:

  1. Remove Shiitake stems and slice the caps.
  2. In a small bowl, mix soy sauce, oyster sauce and sesame oil. Set aside.
  3. Heat vegetable oil in a wok or large frying pan over medium-high heat.
  4. Add Shiitake mushrooms and cook until tender and slightly browned (about 4–5 minutes).
  5. Add garlic and ginger, stir fry briefly until fragrant.
  6. Add bell pepper and optional greens, cook for 1–2 minutes.
  7. Add cooked noodles and pour over the sauce.
  8. Toss everything together until well coated and heated through.
  9. Serve topped with spring onions and sesame seeds.

 

CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
