A quick and colourful stir fry using a mix of oyster mushrooms. Packed with flavour, texture and nutrients — perfect for a simple, healthy meal.

INGREDIENTS:
- 300g mixed oyster mushrooms (blue, yellow, pink, black pearl, king)
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
- 2 garlic cloves (minced)
- 1 bell pepper (sliced)
- 1 carrot (sliced)
- 1 spring onion (sliced)
- Cooked rice or noodles to serve
METHOD:
- Tear mushrooms into large strips.
- In a small bowl, mix soy sauce, oyster sauce and sesame oil. Set aside.
- Heat vegetable oil in a wok or large frying pan over medium-high heat.
- Add garlic, carrot and bell pepper. Stir fry for 2–3 minutes.
- Add mixed oyster mushrooms and cook until tender and slightly browned (about 4–5 minutes).
- Pour in the sauce and toss everything together.
- Serve over rice or noodles and garnish with spring onions.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
