A delicious plant-based alternative using Lion’s Mane mushrooms. Tender, flaky and packed with flavour, perfect as a seafood-style dish.

INGREDIENTS:
- 200g Lion’s Mane mushrooms
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 2 tsp Worcestershire sauce
- ¼ tsp smoked paprika
- ½ tsp lemon juice
- 2 spring onions (finely chopped)
- 1 tbsp butter
- Salt & pepper
- Optional: 2 tbsp breadcrumbs
- Optional: chopped parsley
METHOD:
- Tear Lion’s Mane into bite-sized pieces.
- Sauté mushrooms in butter over medium heat for 5–7 minutes until browned.
- In a bowl, combine mayonnaise, mustard, Worcestershire sauce, lemon juice, smoked paprika and spring onions.
- Add cooked mushrooms to the mixture and stir well.
- Season with salt and pepper.
- Optional: Top with breadcrumbs, parsley and a squeeze of lemon.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
