King Oyster Mushroom ‘Scallops’ Recipe

A simple and delicious way to enjoy King Oyster mushrooms. Golden, buttery and tender, with a rich umami flavour that makes them a perfect plant-based alternative to scallops.

INGREDIENTS:

  • 2–3 King Oyster mushrooms
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves (minced)
  • 2 tbsp soy sauce
  • ¼ tsp agave nectar or maple syrup
  • Pinch of sea salt
  • Pinch of black pepper
  • Squeeze of lemon
  • Optional: chopped parsley

METHOD:

  1. Slice King Oyster mushrooms into 1-inch rounds.
  2. Heat butter and olive oil in a frying pan over medium heat.
  3. Fry mushrooms for 2 minutes per side until golden brown.
  4. Add garlic and cook briefly until fragrant.
  5. Add soy sauce, lemon juice and agave/maple syrup. Cook for a further 2 minutes, basting the mushrooms.
  6. Serve with chopped parsley and an extra squeeze of lemon.

 

CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
