A simple and delicious way to enjoy King Oyster mushrooms. Golden, buttery and tender, with a rich umami flavour that makes them a perfect plant-based alternative to scallops.

INGREDIENTS:
- 2–3 King Oyster mushrooms
- 2 tbsp butter
- 1 tbsp olive oil
- 2 garlic cloves (minced)
- 2 tbsp soy sauce
- ¼ tsp agave nectar or maple syrup
- Pinch of sea salt
- Pinch of black pepper
- Squeeze of lemon
- Optional: chopped parsley
METHOD:
- Slice King Oyster mushrooms into 1-inch rounds.
- Heat butter and olive oil in a frying pan over medium heat.
- Fry mushrooms for 2 minutes per side until golden brown.
- Add garlic and cook briefly until fragrant.
- Add soy sauce, lemon juice and agave/maple syrup. Cook for a further 2 minutes, basting the mushrooms.
- Serve with chopped parsley and an extra squeeze of lemon.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
