INGREDIENTS:
- 200g Black Pearl Oyster mushrooms
- 1 tbsp butter
- 1 tbsp olive oil
- 2 garlic cloves (sliced)
- Pinch of sea salt
- Pinch of black pepper
- Squeeze of lemon
- Optional: chopped parsley
- Sourdough toast or pasta to serve
METHOD:
- Tear mushrooms into medium strips.
- Heat olive oil in a large frying pan over medium heat.
- Add mushrooms and cook until golden and crispy (about 4–5 minutes).
- Add garlic and cook briefly until fragrant.
- Add butter and allow it to melt through the mushrooms.
- Season with salt and pepper.
- Finish with lemon and parsley. Serve on toast or with pasta.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
