A simple and satisfying way to cook Lion’s Mane. Thick, meaty slices with a golden, crispy edge and tender, juicy centre — perfect as a plant-based steak alternative.

INGREDIENTS:
- 1 large Lion’s Mane mushroom
- 1 tbsp olive oil
- 1 tbsp butter
- 2 garlic cloves (minced)
- 2 tbsp soy sauce
- 1 tbsp lemon juice
- ½ tsp smoked paprika
- Salt & pepper
- Optional: chopped parsley
METHOD:
- Slice the Lion’s Mane into thick “steaks” (about 1.5–2cm thick).
- Heat olive oil and butter in a frying pan over medium heat.
- Add mushroom slices and gently press down with a spatula.
- Cook for 3–4 minutes per side until golden and crispy.
- Add garlic and sauté briefly.
- Add soy sauce, lemon juice, paprika, salt and pepper.
- Spoon the sauce over the mushrooms and cook for a further 1–2 minutes.
- Serve with chopped parsley.
CHEF TIP: Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
