INGREDIENTS:
- 200g Blue Oyster mushrooms
- 150g pasta of your choice
- 1 tbsp olive oil
- 2 garlic cloves (minced)
- 100ml double cream
- 2 tbsp grated Parmesan
- Pinch of sea salt
- Pinch of black pepper
- Squeeze of lemon
- Optional: chopped parsley
METHOD:
1. Cook the pasta according to package instructions.
2. Tear mushrooms into medium strips.
3. Heat oil in a large frying pan over medium heat.
4. Add mushrooms and garlic. Cook until mushrooms are golden and moisture evaporates (about 4–5 minutes).
5. Add cream, Parmesan, salt, black pepper and lemon. Mix well.
6. Add pasta to the pan, toss to coat, and serve with extra Parmesan and chopped parsley.

Don’t wash mushrooms — brush clean or wipe gently with a damp cloth.
